Cassave Cake and Ube Kalamay

Cassava Cake is one of the most popular and enjoyed delicacies or Kakanin in the Philippines. It is made from grated cassava (Kamoteng Kahoy) mixed with coconut milk, eggs, butter
and topped with a creamy milk mixture.
Kalamay or Calamay is a sticky sweet snack/dessert delicacy. It is made out of glutinous rice flour, coconut milk and sugar usually palm or brown sugar.

Sauteed Mung Beans topped with Pork Cracklings

Ginisang Munggo (Sauteed Mung Beans) is a famous Filipino dish paired with anything fried. Others have it plain, but I usually sauteed garlic, onions and tomatoes with cubed pork or fried pork belly. I also prefer to put in bitter melon leaves (ampalaya leaves), instead of spinach or malunggay (moringa) leaves for added flavor. Biko

Biko is a Filipino rice cake made from sticky rice (locally known as malagkit), coconut milk, and brown sugar. Like other rice cakes, this is referred to as kakanin (derived from the word “kanin” which means rice) and is often eaten as dessert or meryenda (mid-afternoon snack). Traditionally, this delicious rice cake is placed over banana leaves in a bilao (round woven bamboo tray) and garnished with latik (cooked coconut milk residue) on top. Chicken Tinola

Traditionally, this dish is cooked with chicken, wedges of green papaya, and leaves of the siling labuyo chili pepper in broth flavored with ginger, onions and fish sauce. National Visiting Blogs Day!

I know there’s no such thing as what I’ve titled this blog. Okay. Fine. I made it up. Lol! I declared today as the National Visiting Blogs Day. Well for me, but if you want to do it too you can certainly do so. I’ve been replying to your comments, but I must admit I haven’t visited any blogs these past few weeks. I feel awful for not doing so ’cause I used to. I won’t make up excuses such as I’m busy since if you really want to do something, you’ll think of ways so you can still do it despite issues. So today, I’m devoting this entire day visiting all (I’ll try) your awesome blogs. YAY! 😀

Sponge Cupcake ala Brazo de Mercedes

Brazo de Mercedes is a type of jelly roll dessert made with a pillowy meringue rolled around a rich custard filling. That is according to Google. Lol! This one that I’m having is in cupcake though. An awesome dessert it is. It’s been a while since I’ve posted something for my foodie feature so I guess this will be good enough for now. Anyway, I’ll see if I can post a separate feature about the blogs I’ll visit today and perhaps share what I’ve been missing from their blogs. Have a great week sweethearts! ♥
